Garlic Butter Shrimp with Veggies

Ingredients

- (1 lb) shrimp, peeled and deveined
- (4 tbsp) butter
- (6 cloves) garlic, minced
- (1 cup) bell peppers, sliced
- (1 cup) zucchini, sliced
- (1 cup) cherry tomatoes, halved
- (1/2 tsp) salt
- (1/2 tsp) black pepper
- (1/2 tsp) paprika
- (1/4 cups) fresh parsley, chopped
- (1) lemon, juiced

In a large skillet, melt 4 tbsp butter over medium heat.

Add 6 cloves minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

Add 1 lb peeled and deveined shrimp to the skillet, season with 1/2 tsp salt, 1/2 tsp black pepper, and 1/2 tsp paprika. Cook for 3-4 minutes until shrimp are pink and opaque.

Remove the shrimp from the skillet and set aside.

In the same skillet, add 1 cup sliced bell peppers, 1 cup sliced zucchini, and 1 cup halved cherry tomatoes. Sauté for 5-7 minutes until vegetables are tender.

Return the shrimp to the skillet, add 1/4 cup chopped fresh parsley and the juice of 1 lemon. Stir to combine and heat through for an additional 2 minutes.
