Garlic Butter Chicken and Veggies

Ingredients

- (4) chicken breasts
- (1/2 cups) unsalted butter
- (6 cloves) garlic
- (2) zucchinis
- (1) bell pepper
- (1) onion
- (1 tsp) dried thyme
- (1 tsp) dried oregano
- (1/2 tsp) black pepper
- (1/2 tsp) salt
- (1/4 cups) fresh parsley

In a large skillet, melt the (1/2 cup) unsalted butter over medium heat.

Add (6 cloves) minced garlic to the skillet and sauté until fragrant, about 1 minute.

Season (4) chicken breasts with (1/2 tsp) salt and (1/2 tsp) black pepper. Add the chicken to the skillet and cook for about 6-7 minutes per side, or until fully cooked.

While the chicken is cooking, chop (2) zucchinis, (1) bell pepper, and (1) onion into bite-sized pieces.

Once the chicken is cooked through, remove it from the skillet and let it rest on a plate.

In the same skillet, add the chopped veggies and sauté for about 5-7 minutes, or until they are tender and slightly browned.

Stir in (1 tsp) dried thyme and (1 tsp) dried oregano, mixing well with the vegetables.
