Fresh Strawberry Fool with Whipped Cream in serving glasses

  • (2 cups) fresh strawberries, hulled and sliced
  • (1/4 cups) granulated sugar
  • (1 teaspoon) vanilla extract
  • (1 cup) heavy whipping cream
  • (2 tablespoons) powdered sugar

    In a medium bowl, combine 2 cups of sliced fresh strawberries and 1/4 cup of granulated sugar. Stir gently and let sit for 30 minutes to macerate and release juices.

    After 30 minutes, mash half of the strawberries with a fork to create a chunky puree, leaving some pieces whole for texture.

    In another bowl, add 1 cup of heavy whipping cream and 2 tablespoons of powdered sugar. Whip with an electric mixer on medium speed until soft peaks form, about 3-5 minutes.

    Gently fold the mashed strawberries into the whipped cream along with 1 teaspoon of vanilla extract until fully combined. Be careful not to deflate the whipped cream too much.
