Fresh Spinach and Feta Breakfast Omelette

Ingredients

- (1/2 cups) milk
- (2 cups) fresh spinach, chopped
- (1 cup) feta cheese, crumbled
- (1/4 cups) onion, finely chopped
- (1 tablespoon) olive oil
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper

In a large bowl, whisk together 8 large eggs and 1/2 cup milk until well combined. Add 2/4 teaspoon salt.

Add 1/2 teaspoon salt and 1/4 teaspoon black pepper to the egg mixture and mix well.

Heat 1 tablespoon olive oil in a large non-stick skillet over medium heat.

Add 1/4 cup finely chopped onion to the skillet and sauté for 2-3 minutes until softened.

Stir in 2 cups chopped fresh spinach and cook for another 2 minutes until wilted.

Pour the egg mixture into the skillet over the spinach and onion.

Cook for 4-5 minutes, gently lifting the edges of the omelette with a spatula to allow uncooked egg to flow underneath.

Once the eggs are mostly set, sprinkle 1 cup crumbled feta cheese over one half of the omelette.

Carefully fold the other half of the omelette over the feta and cook for an additional 2 minutes until fully cooked through.
