Fluffy Chia Seed Pancakes with Berries

Ingredients
Yields 8 pancakes
- (1 cup) all-purpose flour
- (1 tbsp) baking powder
- (1 tbsp) sugar
- (1/2 tsp) salt
- (1 cup) milk
- (2) large eggs
- (2 tbsp) vegetable oil
- (1/4 cups) chia seeds
- (1 cup) mixed berries (strawberries, blueberries, raspberries)
Instructions

In a large bowl, whisk together the (1) cup all-purpose flour, (1) tbsp baking powder, (1) tbsp sugar, and (1 /2) tsp salt.

In another bowl, whisk together the (1) cup milk, (2) large eggs, and (2) tbsp vegetable oil until well combined.

Add the wet ingredients to the dry ingredients and stir until just combined, being careful not to overmix.

Fold in the (1 /4) cup chia seeds until evenly distributed throughout the batter.

Preheat a non-stick skillet over medium heat. Grease lightly with oil if necessary.

Pour (1 /4) cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

Flip the pancakes and cook for an additional 2-3 minutes until golden brown. Repeat until all batter is used.

Serve the pancakes warm, topped with (1) cup mixed berries.
