Fluffy Breakfast Waffles topped with Fresh Fruits

  • (2) large eggs
  • (1 3/4 cups) all-purpose flour
  • (1/4 cups) granulated sugar
  • (1 tbsp) baking powder
  • (1/2 tsp) salt
  • (1/2 cups) milk
  • (1/2 cups) buttermilk
  • (1/2 cups) unsalted butter, melted
  • (1 tsp) vanilla extract
  • (2 cups) mixed fresh fruit (such as strawberries, blueberries, and banana slices)

    In a large mixing bowl, whisk together the (2) large eggs and (1/4 cup) granulated sugar until well combined.

    Add in the (1 3/4 cups) all-purpose flour, (1 tbsp) baking powder, and (1/2 tsp) salt. Mix until dry ingredients are just incorporated.

    In another bowl, combine the (1/2 cup) milk, (1/2 cup) buttermilk, (1/2 cup) melted unsalted butter, and (1 tsp) vanilla extract. Stir until mixed well.

    Pour the wet mixture into the dry ingredients and gently fold until just combined. Do not over-mix; it's okay if a few lumps remain.

    Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with non-stick spray or melted butter.
