Fluffy Breakfast Waffles with Fresh Fruit

Ingredients
Yields 8 waffles
- (2) large eggs
- (1 3/4 cups) all-purpose flour
- (1/4 cups) granulated sugar
- (1 tbsp) baking powder
- (1/2 tsp) salt
- (1/2 cups) milk
- (1/2 cups) buttermilk
- (1/2 cups) unsalted butter, melted
- (1 tsp) vanilla extract
- (2 cups) mixed fresh fruit (such as strawberries, blueberries, and banana slices)

In a large mixing bowl, whisk together the (2) large eggs and (1/4 cup) granulated sugar until well combined.

Add in the (1 3/4 cups) all-purpose flour, (1 tbsp) baking powder, and (1/2 tsp) salt. Mix until dry ingredients are just incorporated.

In another bowl, combine the (1/2 cup) milk, (1/2 cup) buttermilk, (1/2 cup) melted unsalted butter, and (1 tsp) vanilla extract. Stir until mixed well.

Pour the wet mixture into the dry ingredients and gently fold until just combined. Do not over-mix; it's okay if a few lumps remain.

Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with non-stick spray or melted butter.

Pour an appropriate amount of waffle batter (about (1 cup) depending on your waffle iron size) onto the heated waffle iron and close the lid. Cook until golden brown and crisp, about 5-7 minutes.
