  • (1) ripe banana
  • (1 cup) rolled oats
  • (1 cup) milk
  • (2) large eggs
  • (1 tbsp) baking powder
  • (1 tbsp) vanilla extract
  • (1/2 tsp) cinnamon
  • (1/4 tsp) salt
  • (2 tbsp) honey
  • (2 tbsp) vegetable oil
  • (1/2 cups) chopped walnuts (optional)
  • (1/4 cups) chocolate chips (optional)

Instructions

    In a bowl, mash the (1) ripe banana until smooth.

    Add the (1 cup) rolled oats, (1 cup) milk, (2) large eggs, (1 tbsp) baking powder, (1 tbsp) vanilla extract, (1/2 tsp) cinnamon, (1/4 tsp) salt, and (2 tbsp) honey to the mashed banana. Mix until well combined and let the batter sit for about 10 minutes to thicken.

    Heat a non-stick skillet over medium heat and add (1 tbsp) vegetable oil.

    Pour about (1/4 cup) of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2 minutes on the other side until golden brown.

    If using, sprinkle (1/2 cup) chopped walnuts or (1/4 cup) chocolate chips on top of the pancakes while they cook on the second side.

    Repeat with remaining batter, adding more oil to the skillet as needed.
