- (1 lb) chicken breast, cut into 1-inch pieces
- (1/4 cups) fresh lemon juice
- (2 tbsp) olive oil
- (3 cloves) garlic, minced
- (2 tsp) dried oregano
- (1 tsp) dried thyme
- (1 tsp) salt
- (1/2 tsp) black pepper
- (1/4 cups) fresh parsley, chopped
- (8) wooden skewers, soaked in water for 30 minutes

In a bowl, combine (1/4 cup) fresh lemon juice, (2 tbsp) olive oil, (3 cloves) minced garlic, (2 tsp) dried oregano, (1 tsp) dried thyme, (1 tsp) salt, and (1/2 tsp) black pepper to make the marinade.

Add the (1 lb) chicken breast pieces to the marinade and mix well to ensure all pieces are coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Preheat your grill to medium-high heat.

Thread the marinated chicken pieces onto the (8) soaked wooden skewers, leaving a little space between each piece.

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and juices run clear.

Once done, remove from the grill, sprinkle with (1/4 cup) chopped fresh parsley, and serve immediately.
