Egg and Veggie Breakfast Wraps

Ingredients
Yields 4 servings
- (4) large eggs
- (1) bell pepper, diced
- (1/2) onion, diced
- (1) zucchini, diced
- (1 cup) spinach, chopped
- (1/4 cups) shredded cheese, optional
- (4) whole wheat tortillas
- (2 tbsp) olive oil
- (1/2 tsp) black pepper
- (1/2 tsp) salt

In a skillet, heat (2 tbsp) olive oil over medium heat.

Add the (1 /2) onion and sauté for about 2-3 minutes until translucent.

Add the (1) bell pepper and (1) zucchini to the skillet, cooking for another 4-5 minutes until softened.

Stir in (1 cup) spinach and cook until just wilted, about 1-2 minutes.

In a bowl, whisk together (4) large eggs with (1/2 tsp) salt and (1/2 tsp) black pepper.

Pour the egg mixture into the skillet with the veggies, stirring gently until eggs are cooked through, about 3-4 minutes.

Lay out (4) whole wheat tortillas on a flat surface.

Divide the egg and veggie mixture evenly among the tortillas. If desired, sprinkle (1/4 cup) shredded cheese on top.

Fold the sides of each tortilla inward and roll them up tightly from the bottom to form wraps.
