Servings4

Yields 4 servings

  • (1 lb) medium shrimp, peeled and deveined
  • (2 tbsp) olive oil
  • (1 tsp) garlic powder
  • (1 tsp) chili powder
  • (1/2 tsp) cumin
  • (1/4 tsp) salt
  • (8) small corn tortillas
  • (1 cup) shredded cabbage
  • (1/2 cups) cherry tomatoes, halved
  • (1/4 cups) fresh cilantro, chopped
  • (1/2) avocado, sliced
  • (1/2 cups) sour cream
  • (1 tbsp) lime juice
  • (1/4 tsp) garlic powder (for crema)
  • (1) lime, cut into wedges

Instructions

  1. 1

In a bowl, toss the (1 lb) shrimp with (2 tbsp) olive oil, (1 tsp) garlic powder, (1 tsp) chili powder, (1/2 tsp) cumin, and (1/4 tsp) salt until well coated.

  2. 2

Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat and set aside.

  3. 3

In a small bowl, mix (1/2 cup) sour cream, (1 tbsp) lime juice, and (1/4 tsp) garlic powder to make the lime crema. Stir until smooth and set aside.

  4. 4

Warm the (8) corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

  5. 5

To assemble the tacos, place some (1 cup) shredded cabbage on each tortilla, followed by the cooked shrimp, (1/2 cup) cherry tomatoes, (1/4 cup) fresh cilantro, and (1/2) sliced avocado. Drizzle with lime crema and squeeze a lime wedge over the top.
