Ingredients
Yields 4 servings
- (1 cup) quinoa
- (2 cups) vegetable broth
- (1) medium onion, diced
- (2 cloves) garlic, minced
- (1) red bell pepper, diced
- (1 cup) cherry tomatoes, halved
- (1 can) (15 oz) chickpeas, drained and rinsed
- (1/2) cucumber, diced
- (1/4 cups) kalamata olives, pitted and halved
- (1/2 tsp) dried oregano
- (2 tbsp) olive oil
- (1/4 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) feta cheese, crumbled (optional)
- (2 tbsp) fresh parsley, chopped (for garnish)

In a medium pot, heat (2 tbsp) olive oil over medium heat. Add the (1) medium onion and sauté until it becomes translucent, about 3-4 minutes.

Add the (2 cloves) garlic and sauté for another minute until fragrant.

Stir in the (1) cup quinoa, (2 cups) vegetable broth, (1) red bell pepper, (1 cup) cherry tomatoes, and (1 can) chickpeas.

Season. (1/2 tsp) dried oregano, (1/4 tsp) salt, and (1/4 tsp) black pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the quinoa is fluffy and the liquid is absorbed.

Once cooked, remove from heat and fluff the quinoa with a fork. Stir in the (1/2) cucumber and (1/4 cup) kalamata olives.

If desired, top with (1/4 cup) crumbled feta cheese and garnish with (2 tbsp) fresh parsley before serving.
