Easy One-Pan Ratatouille with Quinoa

Ingredients

- (1) zucchini, diced
- (1) bell pepper, chopped
- (1) eggplant, diced
- (1) onion, chopped
- (2 cloves) garlic, minced
- (1 can) (14.5 oz) diced tomatoes
- (1/2 tsp) dried oregano
- (1/2 tsp) dried basil
- (1 cup) quinoa, rinsed
- (2 cups) vegetable broth
- (2 tbsp) olive oil
- (1/4 tsp) salt
- (1/4 tsp) black pepper

In a large pan, heat (2 tbsp) olive oil over medium heat. Add the (1) chopped onion and sauté until translucent, about 5 minutes.

Add the (2 cloves) minced garlic and cook for an additional minute until fragrant.

Stir in the (1) diced zucchini, (1) chopped bell pepper, and (1) diced eggplant. Sauté the vegetables for about 8-10 minutes until they begin to soften.

Add the (1 can) diced tomatoes, (1/2 tsp) dried oregano, (1/2 tsp) dried basil, (1/4 tsp) salt, and (1/4 tsp) black pepper. Stir to combine.

Next, add the (1 cup) rinsed quinoa and (2 cups) vegetable broth. Bring the mixture to a boil.

Once boiling, reduce the heat to low, cover the pan, and let it simmer for 20 minutes, or until the quinoa is cooked and the liquid is absorbed.

After 20 minutes, remove the pan from heat and let it sit, covered, for another 5 minutes.
