Easy One-Pan Mediterranean Chickpea Stew

Ingredients

- (2 tbsp) olive oil
- (1) onion, diced
- (2 cloves) garlic, minced
- (1) red bell pepper, diced
- (1) zucchini, diced
- (1 can) (15 oz) chickpeas, drained and rinsed
- (1 can) (14.5 oz) diced tomatoes
- (1 tsp) ground cumin
- (1 tsp) smoked paprika
- (2 cups) vegetable broth
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) fresh parsley, chopped
- (1 lemon) for juice

In a large pan, heat the (2 tbsp) olive oil over medium heat.

Add the (1) onion, diced, and sauté for about 5 minutes until soft and translucent.

Stir in the (2 cloves) garlic, minced, and cook for an additional minute until fragrant.

Add the (1) red bell pepper, diced, and (1) zucchini, diced, and cook for 5-7 minutes until they start to soften.

Stir in the (1 can) chickpeas, (1 can) diced tomatoes, (1 tsp) ground cumin, (1 tsp) smoked paprika, (2 cups) vegetable broth, (1/2 tsp) salt, and (1/4 tsp) black pepper. Mix well to combine all ingredients.

Bring the mixture to a simmer and cook for about 20-25 minutes, stirring occasionally, until the vegetables are tender and the stew has thickened slightly.
