  • (4) Irish sausages
  • (4 slices) bacon
  • (4) medium potatoes, peeled and sliced
  • (1) large onion, sliced
  • (2 cups) chicken broth
  • (1 tablespoon) fresh parsley, chopped
  • (1 teaspoon) black pepper
  • (1 teaspoon) salt
  • (1 tablespoon) vegetable oil

Instructions

    In a large pot, heat 1 tablespoon of vegetable oil over medium heat.

    Add 4 slices of bacon and cook until crispy, about 5 minutes. Remove bacon and set aside, leaving the fat in the pot.

    In the same pot, add 4 Irish sausages and brown on all sides, about 5-7 minutes. Remove sausages and slice them into thick pieces.

    Add 1 large sliced onion to the pot and sauté until translucent, about 3 minutes.

    Layer the bottom of the pot with half of the sliced potatoes, followed by the sliced sausages and crumbled bacon. Top with the remaining potatoes.

    Pour in 2 cups of chicken broth, and season with 1 teaspoon of salt and 1 teaspoon of black pepper.

    Bring to a simmer, cover the pot, and cook on low heat for 30-40 minutes until the potatoes are tender.

    Sprinkle with 1 tablespoon of chopped fresh parsley before serving.
