Delicious Creamy Spinach and Artichoke Pasta

Ingredients
Yields 4 servings
- (8 oz) pasta (fettuccine or penne)
- (1 tbsp) olive oil
- (2 cloves) garlic, minced
- (1 (14 oz) can) artichoke hearts, drained and chopped
- (2 cups) fresh spinach, roughly chopped
- (1 cup) heavy cream
- (1/2 cups) grated Parmesan cheese
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) fresh basil, chopped (optional)

Boil a large pot of salted water and cook the (8 oz) pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

In a large skillet, heat (1 tbsp) olive oil over medium heat. Add (2 cloves) minced garlic and sauté for 1-2 minutes until fragrant.

Add (1 (14 oz) can) chopped artichoke hearts to the skillet and cook for another 3-4 minutes, stirring occasionally.

Stir in (2 cups) chopped fresh spinach and cook until wilted, about 2-3 minutes.

Pour in (1 cup) heavy cream and bring to a gentle simmer. Stir in (1/2 cup) grated Parmesan cheese, (1/2 tsp) salt, and (1/4 tsp) black pepper, mixing well until the cheese is melted and the sauce is creamy.

Add the cooked pasta to the skillet, tossing to combine. If the sauce is too thick, add some of the reserved pasta water to reach your desired consistency.

Taste and adjust seasonings as needed. Garnish with (1/4 cup) fresh chopped basil if using. Serve immediately.
