Dehydrated mixed berry breakfast bites on a plate.

Ingredients

Servings4

Yields 4 servings

  • (2 cups) mixed berries (fresh or frozen)
  • (1 cup) rolled oats
  • (1/2 cups) honey
  • (1/4 cups) almond butter
  • (1/2 teaspoons) vanilla extract
  • (1/4 teaspoons) salt

Instructions

  1. 1

If using fresh berries, wash and dry them. If using frozen berries, thaw and drain excess liquid.

  2. 2

In a blender or food processor, combine 2 cups of mixed berries, 1/2 cup of honey, 1/4 cup of almond butter, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Blend until smooth. Add 1/4 teaspoon salt.

  3. 3

In a large bowl, mix the blended berry mixture with 1 cup of rolled oats until well combined.

  4. 4

Line a baking sheet with parchment paper. Spread the mixture evenly onto the prepared baking sheet, about 1/2 inch thick.

  5. 5

Place the baking sheet in a dehydrator set to 135°F (57 °C) for 6-8 hours, or until the mixture is completely dried and firm. If you don't have a dehydrator, you can use an oven set to the lowest temperature, leaving the door slightly ajar for ventilation.

  6. 6

Once dehydrated, remove from the dehydrator or oven and let cool for about 10 minutes. Cut into bite-sized squares or bars.

  7. 7

Store the dehydrated breakfast bites in an airtight container at room temperature for up to 2 weeks.
