    Line a baking sheet with parchment paper.

    Peel the bananas and slice them into 1/8-inch thick rounds.

    In a small bowl, mix 1 tablespoon of lemon juice with 1 tablespoon of honey and 1/2 teaspoon of cinnamon if using.

    Dip each banana slice into the lemon juice mixture to coat, then place them in a single layer on the prepared baking sheet.
