  • (1 cup) dried apricots
  • (1 cup) rolled oats
  • (1/2 cups) almond butter
  • (1/4 cups) honey
  • (1/2 cups) chopped nuts (such as almonds or walnuts)
  • (1/4 teaspoons) salt
  • (1/2 teaspoons) cinnamon
  • (1/4 cups) shredded coconut (optional)

    Preheat the oven to 350°F (175 °C).

    In a food processor, combine 1 cup dried apricots and pulse until finely chopped.

    Add 1 cup rolled oats, 1/2 cup almond butter, 1/4 cup honey, 1/2 cup chopped nuts, 1/4 teaspoon salt, and 1/2 teaspoon cinnamon to the food processor. Pulse until the mixture is well combined and sticky.

    If using, stir in 1/4 cup shredded coconut until evenly distributed.
