Curried chicken salad on mixed greens

  • (2) chicken breasts, cooked and shredded
  • (1/4 cups) mayonnaise
  • (2 tbsp) plain yogurt
  • (1 tbsp) curry powder
  • (1/2 tsp) garlic powder
  • (1/2 tsp) onion powder
  • (1/4 cups) raisins
  • (1/4 cups) chopped almonds
  • (1/2) red bell pepper, diced
  • (1/2) green apple, diced
  • (4 cups) mixed greens
  • (1 tbsp) lemon juice
  • (1/4 tsp) salt
  • (1/4 tsp) black pepper

Instructions

    In a mixing bowl, combine the (2 tbsp) plain yogurt and (1/4 cup) mayonnaise, then stir in the (1 tbsp) curry powder, (1/2 tsp) garlic powder, and (1/2 tsp) onion powder until well blended.

    Add the (2) cooked and shredded chicken breasts into the curry mixture and toss until evenly coated.

    Fold in (1/4 cup) raisins, (1/4 cup) chopped almonds, (1 /2) diced red bell pepper, and (1 /2) diced green apple, mixing gently to combine all ingredients.
