  • (1 cup) breadcrumbs
  • (1/2 cups) grated Parmesan cheese
  • (2 cups) marinara sauce
  • (2 cups) shredded mozzarella cheese
  • (4) large eggs
  • (2 tsp) Italian seasoning
  • (1 tsp) garlic powder
  • (2 lb) broccoli florets
  • (4 tbsp) olive oil
  • (1 tsp) salt
  • (1/2 tsp) black pepper
  • (1/2 tsp) crushed red pepper (optional)

    In a shallow bowl, beat the (4) large eggs; set aside.

    In another bowl, mix together (1 cup) breadcrumbs, (1/2 cup) grated Parmesan cheese, (2 tsp) Italian seasoning, (1 tsp) garlic powder, and a pinch of salt.

    Dip each (4) chicken breasts into the egg mixture, then coat them in the breadcrumb mixture, pressing gently to adhere.

    Place the coated chicken breasts on a baking sheet lined with parchment paper.
