Creamy Tuscan Salmon served with spinach

  • (4) salmon fillets
  • (2 tbsp) olive oil
  • (1) medium onion, chopped
  • (3 cloves) garlic, minced
  • (1/2 cups) sun-dried tomatoes, chopped
  • (1 cup) heavy cream
  • (1/2 cups) chicken broth
  • (2 cups) fresh spinach
  • (1/2 tsp) dried oregano
  • (1/4 tsp) crushed red pepper flakes
  • (1/4 tsp) black pepper
  • (1/2 tsp) salt
  • (1/4 cups) grated Parmesan cheese
  • (2 tbsp) fresh basil, chopped

Instructions

    Heat (2 tbsp) olive oil in a large skillet over medium heat.

    Add the (1) chopped onion and sauté until translucent, about 4-5 minutes.

    Stir in the (3 cloves) minced garlic and sauté for an additional minute until fragrant.

    Add the (1/2 cup) chopped sun-dried tomatoes and cook for 2 minutes, stirring occasionally.

    Pour in (1 cup) heavy cream and (1/2 cup) chicken broth, bringing the mixture to a gentle simmer.

    Add (2 cups) fresh spinach, (1/2 tsp) dried oregano, (1/4 tsp) crushed red pepper flakes, (1/4 tsp) black pepper, and (1/2 tsp) salt. Stir until the spinach wilts, about 2-3 minutes.
