Creamy Tuscan Salmon with Spinach

Ingredients

- (4) salmon fillets
- (2 tbsp) olive oil
- (1) medium onion, chopped
- (3 cloves) garlic, minced
- (1/2 cups) sun-dried tomatoes, chopped
- (1 cup) heavy cream
- (1/2 cups) chicken broth
- (2 cups) fresh spinach
- (1/2 tsp) dried oregano
- (1/4 tsp) crushed red pepper flakes
- (1/4 tsp) black pepper
- (1/2 tsp) salt
- (1/4 cups) grated Parmesan cheese
- (2 tbsp) fresh basil, chopped

Heat (2 tbsp) olive oil in a large skillet over medium heat.

Add the (1) chopped onion and sauté until translucent, about 4-5 minutes.

Stir in the (3 cloves) minced garlic and sauté for an additional minute until fragrant.

Add the (1/2 cup) chopped sun-dried tomatoes and cook for 2 minutes, stirring occasionally.

Pour in (1 cup) heavy cream and (1/2 cup) chicken broth, bringing the mixture to a gentle simmer.

Add (2 cups) fresh spinach, (1/2 tsp) dried oregano, (1/4 tsp) crushed red pepper flakes, (1/4 tsp) black pepper, and (1/2 tsp) salt. Stir until the spinach wilts, about 2-3 minutes.

Add the (4) salmon fillets to the skillet, skin-side down. Spoon some of the creamy sauce over the salmon.
