Creamy Tuscan Garlic Shrimp Pasta

Ingredients
Yields 4 servings
- (8 oz) fettuccine pasta
- (1 lb) shrimp, peeled and deveined
- (2 tbsp) olive oil
- (4 cloves) garlic, minced
- (1 cup) cherry tomatoes, halved
- (1 cup) spinach, fresh
- (1 cup) heavy cream
- (1/2 cups) grated Parmesan cheese
- (1/2 tsp) Italian seasoning
- Salt to taste
- Pepper to taste
- Fresh basil for garnish

Cook 8 oz fettuccine pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 2 tbsp olive oil over medium heat. Add 1 lb shrimp and season with salt and pepper. Cook for 2-3 minutes until shrimp are pink and opaque. Remove shrimp from skillet and set aside. Add Salt to taste and Fresh basil for garnish.

In the same skillet, add 4 cloves minced garlic and sauté for 1 minute until fragrant.

Add 1 cup cherry tomatoes and cook for 2-3 minutes until they start to soften.

Stir in 1 cup fresh spinach and cook until wilted, about 1 minute.

Pour in 1 cup heavy cream and add 1/2 cup grated Parmesan cheese and 1/2 tsp Italian seasoning. Stir well to combine and let simmer for 3-4 minutes until the sauce thickens slightly.

Return the cooked shrimp to the skillet and toss to coat in the sauce.

Add the drained fettuccine pasta to the skillet and mix until the pasta is well coated with the creamy sauce. Adjust seasoning with salt and pepper as needed.
