Creamy Tuscan Garlic Chicken with Spinach and Tomatoes

- (4) boneless, skinless chicken breasts
- (1 tablespoon) olive oil
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (4 cloves) garlic, minced
- (1 cup) cherry tomatoes, halved
- (2 cups) fresh spinach
- (1 cup) heavy cream
- (1/2 cups) grated Parmesan cheese
- (1 teaspoon) Italian seasoning
- (1/4 teaspoons) red pepper flakes (optional)
- Fresh basil for garnish (optional)

Season 4 boneless, skinless chicken breasts with 1 teaspoon salt and 1/2 teaspoon black pepper. Add 2/4 teaspoon black pepper, 1/4 teaspoon red pepper flakes (optional), and Fresh basil for garnish (optional).

In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add 4 cloves minced garlic and sauté for about 30 seconds until fragrant.

Add 1 cup halved cherry tomatoes and cook for 2-3 minutes until they start to soften.

Stir in 2 cups fresh spinach and cook until wilted, about 1-2 minutes.

Pour in 1 cup heavy cream, 1/2 cup grated Parmesan cheese, 1 teaspoon Italian seasoning, and 1/4 teaspoon red pepper flakes (if using). Stir well to combine and let simmer for 3-4 minutes until the sauce thickens slightly.

Return the cooked chicken to the skillet, spooning the sauce over the chicken. Cook for an additional 2-3 minutes to heat through.
