Creamy Tuscan Chicken Pasta

Ingredients
Yields 4 servings
- (8 oz) penne pasta
- (2 tbsp) olive oil
- (1 lb) chicken breast, cut into bite-sized pieces
- (1 tsp) salt
- (1/2 tsp) black pepper
- (4 cloves) garlic, minced
- (1 cup) heavy cream
- (1/2 cups) grated Parmesan cheese
- (1/2 cups) sun-dried tomatoes, chopped
- (2 cups) fresh spinach
- (1/4 cups) fresh basil, chopped
- (1/4 tsp) red pepper flakes

Cook 8 oz penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 2 tbsp olive oil over medium-high heat.

Add 1 lb chicken breast, cut into bite-sized pieces, and season with 1 tsp salt and 1/2 tsp black pepper. Cook until golden brown and cooked through, about 7-10 minutes. Remove chicken from skillet and set aside.

In the same skillet, add 4 cloves minced garlic and sauté for 1 minute until fragrant.

Pour in 1 cup heavy cream and bring to a simmer. Stir in 1/2 cup grated Parmesan cheese until melted and smooth.

Add 1/2 cup chopped sun-dried tomatoes and 2 cups fresh spinach. Cook until spinach is wilted, about 2-3 minutes.

Return the cooked chicken to the skillet and mix well. Add 1/4 tsp red pepper flakes for a hint of spice.

Toss the cooked penne pasta into the sauce and mix until well combined. Adjust seasoning with salt and pepper if needed.
