Creamy Tuscan Chicken and Spinach

Ingredients

- (4) boneless, skinless chicken breasts
- (1 tbsp) olive oil
- (3 cloves) garlic, minced
- (1 cup) heavy cream
- (1/2 cups) chicken broth
- (1/2 cups) grated Parmesan cheese
- (2 cups) fresh spinach
- (1/2 cups) sun-dried tomatoes, chopped
- (1 tsp) Italian seasoning
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 tsp) red pepper flakes (optional)
- (1 tbsp) fresh basil, chopped (for garnish)

In a large skillet, heat (1 tbsp) olive oil over medium heat.

Add the (4) boneless, skinless chicken breasts to the skillet and season with (1/2 tsp) salt, (1/4 tsp) black pepper, and (1/4 tsp) red pepper flakes if using. Cook for about 6-7 minutes per side until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add (3 cloves) minced garlic and sauté for about 30 seconds until fragrant.

Pour in (1/2 cup) chicken broth and scrape the bottom of the skillet to release any browned bits.

Stir in (1 cup) heavy cream, (1/2 cup) grated Parmesan cheese, and (1 tsp) Italian seasoning. Mix well and allow to simmer for about 5 minutes until slightly thickened.

Add (2 cups) fresh spinach and (1/2 cup) chopped sun-dried tomatoes to the sauce, cooking until the spinach is wilted.

Return the cooked chicken to the skillet, spooning sauce over the top. Cook for an additional 2-3 minutes to heat through.

Garnish with (1 tbsp) chopped fresh basil before serving.
