Creamy Tomato Basil Chicken Bake

Ingredients

- (4) boneless, skinless chicken breasts
- (2 cups) cherry tomatoes, halved
- (1 cup) heavy cream
- (1 cup) shredded mozzarella cheese
- (1/2 cups) grated Parmesan cheese
- (1/2 cups) fresh basil leaves, chopped
- (3 cloves) garlic, minced
- (1 tbsp) olive oil
- (1 tsp) Italian seasoning
- (1/2 tsp) salt
- (1/4 tsp) black pepper

Preheat your oven to 375°F (190 °C).

In a large skillet, heat (1 tbsp) olive oil over medium heat. Add (3 cloves) minced garlic and sauté for about 1 minute until fragrant.

Add the (4) chicken breasts to the skillet, seasoning with (1/2 tsp) salt, (1/4 tsp) black pepper, and (1 tsp) Italian seasoning. Cook for about 5 minutes on each side until browned but not fully cooked through.

Remove the chicken from the skillet and place it in a baking dish. Top the chicken with (2 cups) halved cherry tomatoes.

In a mixing bowl, combine (1 cup) heavy cream, (1/2 cup) grated Parmesan cheese, and (1/2 cup) chopped basil. Mix well and pour the mixture over the chicken and tomatoes in the baking dish.

Sprinkle (1 cup) shredded mozzarella cheese over the top of the dish.

Bake in the preheated oven for about 30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden brown.

Remove from the oven and let it sit for a few minutes before serving. Garnish with additional fresh basil if desired.
