Creamy Tomato Basil Chicken

Ingredients

- (4) chicken breasts
- (1 tablespoon) olive oil
- (1) small onion, diced
- (2 cloves) garlic, minced
- (1 can) (14 oz) diced tomatoes
- (1 cup) heavy cream
- (1/2 cups) fresh basil, chopped
- (1 teaspoon) dried oregano
- Salt to taste
- Pepper to taste
- (1/2 cups) grated Parmesan cheese

Heat 1 tablespoon olive oil in a large skillet over medium heat.

Add 4 chicken breasts to the skillet and season with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

In the same skillet, add 1 small onion, diced, and sauté for 3-4 minutes until translucent.

Add 2 cloves garlic, minced, and cook for an additional minute until fragrant.

Stir in 1 can (14 oz) diced tomatoes, 1 teaspoon dried oregano, and season with salt and pepper. Cook for 5 minutes to combine flavors.

Reduce heat to low and add 1 cup heavy cream and 1/2 cup grated Parmesan cheese, stirring until smooth and creamy.
