Creamy Sun-Dried Tomato and Spinach Pasta

Ingredients
Yields 4 servings
- (8 oz) pasta of choice (penne or fettuccine works well)
- (2 tbsp) olive oil
- (2 cloves) garlic, minced
- (1/2 cups) sun-dried tomatoes, chopped
- (1 cup) heavy cream
- (1/2 cups) grated Parmesan cheese
- (3 cups) fresh spinach leaves
- (salt to taste)
- (pepper to taste)
- (1/4 cups) fresh basil, chopped (optional)

Bring a large pot of salted water to a boil and cook the (8 oz) pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat (2 tbsp) olive oil over medium heat. Add (2 cloves) minced garlic and sauté for about 1 minute until fragrant.

Stir in the (1/2 cup) chopped sun-dried tomatoes. Cook for an additional 2-3 minutes to soften the tomatoes.

Pour in (1 cup) heavy cream, stirring to combine, and bring the mixture to a gentle simmer.

Add (1/2 cup) grated Parmesan cheese to the cream sauce, stirring until melted and smooth.

Toss in the (3 cups) fresh spinach leaves and cook for 2-3 minutes until wilted.

Combine the cooked pasta with the creamy sun-dried tomato sauce, tossing well to coat all the pasta. Season with salt and pepper to taste.
