Creamy Spinach and Chicken Pasta Bake

- (8 oz) penne pasta
- (1 lb) boneless, skinless chicken breasts
- (2 cups) fresh spinach
- (1 cup) ricotta cheese
- (1 cup) shredded mozzarella cheese
- (1/2 cups) grated Parmesan cheese
- (2 cloves) garlic, minced
- (1/2 cups) heavy cream
- (1 tsp) Italian seasoning
- (1/2 tsp) salt
- (1/4 tsp) black pepper

Preheat the oven to 375°F (190 °C).

Cook 8 oz penne pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 2 tbsp olive oil over medium heat. Add 1 lb boneless, skinless chicken breasts and cook for about 6-7 minutes per side, or until fully cooked. Remove from skillet and let rest for 5 minutes, then dice into bite-sized pieces.

In the same skillet, add 2 cloves minced garlic and sauté for 1 minute until fragrant. Add 2 cups fresh spinach and cook until wilted, about 2-3 minutes.

In a large mixing bowl, combine the cooked penne pasta, diced chicken, wilted spinach, 1 cup ricotta cheese, 1/2 cup heavy cream, 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp black pepper. Stir until well combined. Add 2/4 tsp salt.

Transfer the pasta mixture into a greased 9x13 inch baking dish. Top with 1 cup shredded mozzarella cheese and 1/2 cup grated Parmesan cheese.

Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
