Creamy Lemon Garlic Salmon Pasta with Spinach

Ingredients
Yields 4 servings
- (8 oz) fettuccine pasta
- (2 tbsp) olive oil
- (4) salmon fillets (6 oz each)
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (4 cloves) garlic, minced
- (1 cup) heavy cream
- (1/2 cups) grated Parmesan cheese
- (1) lemon, juiced and zested
- (4 cups) fresh spinach
- (1/4 tsp) red pepper flakes (optional)
- (2 tbsp) fresh parsley, chopped (for garnish)

Cook 8 oz fettuccine pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 2 tbsp olive oil over medium heat. Season 4 salmon fillets (6 oz each) with 1/2 tsp salt and 1/4 tsp black pepper, then add to the skillet. Add 2/4 tsp salt and 1/4 tsp red pepper flakes (optional).

Cook the salmon for about 4-5 minutes on each side, or until cooked through and flaky. Remove from the skillet and set aside.

In the same skillet, add 4 cloves minced garlic and sauté for 1 minute until fragrant.

Pour in 1 cup heavy cream and bring to a simmer. Stir in 1/2 cup grated Parmesan cheese, the juice and zest of 1 lemon, and mix until smooth.

Add 4 cups fresh spinach to the sauce and cook for 2-3 minutes until wilted. If desired, add 1/4 tsp red pepper flakes for a touch of heat.

Return the cooked salmon to the skillet and gently break it into large pieces. Add the drained fettuccine pasta and toss everything together until well coated in the sauce.
