Creamy Lemon Chicken Pasta

Ingredients

- (8 oz) fettuccine pasta
- (2 tbsp) olive oil
- (1 lb) boneless, skinless chicken breasts, cut into bite-sized pieces
- (1 tsp) salt
- (1/2 tsp) black pepper
- (3 cloves) garlic, minced
- (1 cup) heavy cream
- (1/2 cups) chicken broth
- (1/4 cups) freshly squeezed lemon juice
- (1 tsp) lemon zest
- (1/2 cups) grated Parmesan cheese
- (2 tbsp) fresh parsley, chopped (for garnish)

Cook 8 oz fettuccine pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 2 tbsp olive oil over medium heat. Add 1 lb cut chicken breasts, season with 1 tsp salt and 1/2 tsp black pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside. Add 2/4 tsp black pepper.

In the same skillet, add 3 cloves minced garlic and sauté for 1 minute until fragrant.

Pour in 1 cup heavy cream and 1/2 cup chicken broth, stirring to combine. Bring to a simmer.

Add 1/4 cup freshly squeezed lemon juice and 1 tsp lemon zest to the sauce, stirring well.

Stir in 1/2 cup grated Parmesan cheese until melted and smooth. Adjust seasoning with salt and pepper if needed.

Return the cooked chicken to the skillet and add the drained fettuccine. Toss to coat the pasta and chicken in the creamy sauce.
