Creamy Garlic Shrimp and Spinach Pasta

Ingredients

- (8 oz) spaghetti
- (1 lb) shrimp, peeled and deveined
- (2 cups) fresh spinach
- (4 cloves) garlic, minced
- (1 cup) heavy cream
- (1/2 cups) grated Parmesan cheese
- (2 tbsp) olive oil
- (1 tsp) salt
- (1/2 tsp) black pepper
- (1/4 tsp) red pepper flakes (optional)
- (1 tbsp) fresh parsley, chopped (for garnish)

Bring a large pot of salted water to a boil. Cook 8 oz spaghetti according to package instructions until al dente, then drain and set aside.

In a large skillet, heat 2 tbsp olive oil over medium heat. Add 4 cloves minced garlic and sauté for about 1 minute until fragrant.

Add 1 lb peeled and deveined shrimp to the skillet. Season with 1 tsp salt, 1/2 tsp black pepper, and 1/4 tsp red pepper flakes (if using). Cook for 3-4 minutes until shrimp are pink and opaque, then remove from the skillet and set aside. Add 2/4 tsp black pepper and 1/4 tsp red pepper flakes (optional).

In the same skillet, pour in 1 cup heavy cream and bring to a simmer. Stir in 1/2 cup grated Parmesan cheese until melted and smooth.

Add 2 cups fresh spinach to the skillet and cook for 2-3 minutes until wilted.

Return the cooked shrimp to the skillet and toss everything to combine. Add the drained spaghetti and mix well until the pasta is coated in the creamy sauce.
