Creamy Garlic Mushroom Chicken with Spinach

Ingredients

- (4) boneless, skinless chicken breasts
- (1 tablespoon) olive oil
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (8 ounces) sliced mushrooms
- (4 cloves) garlic, minced
- (1 cup) heavy cream
- (1 cup) chicken broth
- (2 cups) fresh spinach
- (1 teaspoon) dried thyme
- (1/2 cups) grated Parmesan cheese
- (1 tablespoon) chopped fresh parsley (for garnish)

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Season 4 boneless, skinless chicken breasts with 1 teaspoon salt and 1/2 teaspoon black pepper. Add 2/4 teaspoon black pepper and 1 teaspoon dried thyme.

Add the chicken to the skillet and cook for 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add 8 ounces of sliced mushrooms and sauté for about 5 minutes until they are browned.

Add 4 cloves of minced garlic to the mushrooms and cook for an additional 1 minute until fragrant.

Pour in 1 cup of heavy cream and 1 cup of chicken broth, stirring to combine.

Add 2 cups of fresh spinach and 1 teaspoon of dried thyme to the skillet, cooking until the spinach wilts, about 2-3 minutes.

Stir in 1/2 cup of grated Parmesan cheese until melted and creamy.

Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
