Creamy Chicken and Spinach Pasta Bake

Ingredients

- (2) chicken breasts, diced
- (8 oz) penne pasta
- (3 cups) fresh spinach
- (1) medium onion, chopped
- (3 cloves) garlic, minced
- (1 cup) heavy cream
- (1 cup) chicken broth
- (1/2 cups) grated Parmesan cheese
- (1 cup) shredded mozzarella cheese
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (2 tbsp) olive oil
- (1/2 tsp) Italian seasoning

Preheat your oven to 375°F (190 °C).

In a large pot, cook the (8 oz) penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat (2 tbsp) olive oil over medium heat. Add the (1) chopped onion and sauté until translucent, about 5 minutes.

Add the (3 cloves) minced garlic and diced (2) chicken breasts to the skillet. Cook until the chicken is browned and cooked through, about 7-8 minutes.

Stir in (3 cups) fresh spinach, (1 cup) heavy cream, (1 cup) chicken broth, (1/2 tsp) salt, (1/4 tsp) black pepper, and (1/2 tsp) Italian seasoning. Cook until the spinach wilts and the mixture is heated through, around 3 minutes.

Combine the cooked penne pasta with the creamy chicken and spinach mixture. Stir in (1/2 cup) grated Parmesan cheese until well mixed.

Transfer the pasta mixture to a greased 9x13 inch baking dish. Top with (1 cup) shredded mozzarella cheese.

Bake in the preheated oven for 25-30 minutes, or until the top is bubbly and golden brown. Remove from oven and let cool for a few minutes before serving.
