Creamy Chicken and Mushroom Rice

Ingredients

- (1 lb) chicken breast, diced
- (1 cup) mushrooms, sliced
- (1) medium onion, chopped
- (2 cloves) garlic, minced
- (1 cup) long-grain rice
- (4 cups) chicken broth
- (1 cup) heavy cream
- (1 tablespoon) olive oil
- (1 teaspoon) dried thyme
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1/4 cups) grated Parmesan cheese
- (2 tablespoons) fresh parsley, chopped (for garnish)

In a large pot, heat 1 tablespoon of olive oil over medium heat.

Add 1 medium onion, chopped, and sauté for 3-4 minutes until translucent.

Stir in 2 cloves garlic, minced, and cook for an additional 1 minute until fragrant. Add 2/4 teaspoon black pepper.

Add 1 lb chicken breast, diced, to the pot and cook until browned on all sides, about 5-7 minutes.

Add 1 cup mushrooms, sliced, and cook for another 5 minutes until they soften.

Stir in 1 cup long-grain rice, 4 cups chicken broth, 1 teaspoon dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and liquid is absorbed.

Once the rice is cooked, stir in 1 cup heavy cream and 1/4 cup grated Parmesan cheese until creamy and well combined.
