Creamy Chicken and Asparagus Soup

Ingredients
Yields 4 servings
- (1 lb) chicken breast, diced
- (1 tbsp) olive oil
- (1) medium onion, chopped
- (2 cloves) garlic, minced
- (1 cup) carrots, sliced
- (1 cup) celery, diced
- (1 lb) asparagus, trimmed and cut into 1-inch pieces
- (4 cups) chicken broth
- (1 cup) heavy cream
- (1 tsp) dried thyme
- Salt to taste
- Pepper to taste
- (2 tbsp) fresh parsley, chopped

In a large pot, heat 1 tbsp olive oil over medium heat.

Add 1 medium onion, chopped, and sauté until translucent, about 5 minutes.

Stir in 2 cloves garlic, minced, and cook for an additional 1 minute until fragrant. Add Salt to taste.

Add 1 lb chicken breast, diced, to the pot and cook until browned, about 5-7 minutes.

Incorporate 1 cup carrots, sliced, and 1 cup celery, diced, and cook for another 5 minutes, stirring occasionally.

Pour in 4 cups chicken broth and bring the mixture to a boil.

Reduce heat and add 1 lb asparagus, trimmed and cut into 1-inch pieces, and 1 tsp dried thyme. Simmer for 15 minutes until the asparagus is tender.

Stir in 1 cup heavy cream and season with salt and pepper to taste. Heat through for another 5 minutes.
