Ingredients

Servings4

Yields 4 servings

  • (2) chicken breasts, cut into bite-sized pieces
  • (1/2 cups) dill pickle juice
  • (1) large egg
  • (1/2 cups) milk
  • (1 cup) all-purpose flour
  • (1/2 cups) cornstarch
  • (1 tsp) salt
  • (1 tsp) black pepper
  • (1/2 tsp) paprika
  • (1/2 tsp) garlic powder
  • (1/4 tsp) onion powder
  • (3 cups) vegetable oil for frying

Instructions

  1. 1

In a bowl, combine the (1/2 cup) dill pickle juice with the (2) chicken breasts, ensuring the chicken is completely submerged. Let it marinate for at least 30 minutes in the refrigerator.

  2. 2

In another bowl, whisk together the (1) large egg and (1/2 cup) milk until well combined.

  3. 3

In a separate shallow dish, mix the (1 cup) all-purpose flour, (1/2 cup) cornstarch, (1 tsp) salt, (1 tsp) black pepper, (1/2 tsp) paprika, (1/2 tsp) garlic powder, (1/4 tsp) onion powder, and (if using).

  4. 4

Remove the chicken from the pickle juice and pat it dry with paper towels.

  5. 5

Dip each chicken piece into the egg mixture, allowing excess to drip off, then coat it in the flour mixture, pressing gently to adhere. Shake off any excess flour.

  6. 6

In a large skillet, heat (3 cups) vegetable oil over medium-high heat until shimmering.

  7. 7

Fry the nuggets in batches for about 4-5 minutes, turning occasionally, until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F.

  8. 8

Remove the nuggets from the oil and place them on a paper towel-lined plate to drain excess oil. Repeat with remaining chicken pieces.

  9. 9

Serve warm with your favorite dipping sauces.
