Classic Turkey and Swiss Sandwich with Spring Greens

- (8 slices) whole grain bread
- (8 oz) sliced turkey breast
- (4 oz) Swiss cheese, sliced
- (2 cups) spring greens
- (1/4 cups) mayonnaise
- (2 tbsp) Dijon mustard
- (1 tbsp) olive oil
- (1/2 tsp) salt
- (1/4 tsp) black pepper

In a small bowl, mix 1/4 cup mayonnaise and 2 tbsp Dijon mustard until well combined.

Spread the mayonnaise mixture evenly on one side of each slice of whole grain bread.

Layer 4 slices of bread (mayonnaise side up) with 2 oz sliced turkey breast and 1 oz Swiss cheese each.

Top with 1/2 cup spring greens on each sandwich.

Add the remaining 4 slices of bread on top (mayonnaise side down) to form the sandwiches.

Heat 1 tbsp olive oil in a skillet over medium heat.

Carefully place the sandwiches in the skillet and cook for 3-4 minutes until golden brown.

Flip the sandwiches and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
