  • (8 oz) sliced turkey breast
  • (2) ripe avocados
  • (4) large whole wheat tortillas
  • (1 cup) fresh spinach
  • (1/2 cups) shredded carrots
  • (1/2 cups) sliced cucumbers
  • (1/4 cups) mayonnaise
  • (1 tablespoon) Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

    In a small bowl, mash 2 ripe avocados with a fork until smooth. Season with salt and pepper to taste. Add Salt to taste.

    In another bowl, mix 1/4 cup mayonnaise with 1 tablespoon Dijon mustard until well combined.

    Lay out 4 large whole wheat tortillas on a clean surface.

    Spread an even layer of the avocado mixture (about 1/4 of the mixture per tortilla) over each tortilla.

    Top each tortilla with 2 oz of sliced turkey breast, followed by 1/4 cup fresh spinach, 2 tablespoons shredded carrots, and 2 tablespoons sliced cucumbers.

    Drizzle a little of the mayonnaise-Dijon mixture over the veggies if desired.

    Carefully roll each tortilla tightly, starting from one end and tucking in the sides as you go to secure the filling.
