  • (8 oz) pasta (fusilli or penne)
  • (2 cups) cherry tomatoes, halved
  • (1/2 cups) fresh basil leaves, chopped
  • (1/4 cups) red onion, finely chopped
  • (1/2 cups) mozzarella balls, halved
  • (1/4 cups) olive oil
  • (2 tbsp) balsamic vinegar
  • (1 tsp) garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

    Cook 8 oz pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool.

    In a large bowl, combine 2 cups halved cherry tomatoes, 1/2 cup chopped fresh basil leaves, 1/4 cup finely chopped red onion, and 1/2 cup halved mozzarella balls. Add 2/4 cup fresh basil leaves, chopped and Salt to taste.

    In a small bowl, whisk together 1/4 cup olive oil, 2 tbsp balsamic vinegar, 1 tsp garlic powder, salt, and black pepper to taste.

    Add the cooled pasta to the bowl with the tomato mixture. Pour the dressing over the pasta and toss gently to combine all ingredients evenly.

    Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
