  • (1 cup) rolled oats
  • (1 cup) milk
  • (2) ripe bananas
  • (1) large egg
  • (1 tablespoon) honey
  • (1 teaspoon) vanilla extract
  • (1 teaspoon) baking powder
  • (1/2 teaspoons) cinnamon
  • (1/4 teaspoons) salt
  • (1 tablespoon) butter, for cooking

Instructions

    In a bowl, combine 1 cup rolled oats and 1 cup milk. Let it sit for 10 minutes to soften the oats.

    In a separate bowl, mash 2 ripe bananas until smooth.

    Add 1 large egg, 1 tablespoon honey, and 1 teaspoon vanilla extract to the mashed bananas. Mix well.

    In the bowl with the soaked oats, add the banana mixture, 1 teaspoon baking powder, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Stir until just combined.

    Heat a skillet over medium heat and add 1 tablespoon butter, allowing it to melt.

    Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 3-4 minutes until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
