Classic Shrimp and Broccoli Stir-Fry with Rice

Ingredients
Yields 4 servings
- (1 lb) shrimp, peeled and deveined
- (4 cups) broccoli florets
- (2 cups) cooked white rice
- (1/4 cups) soy sauce
- (2 tablespoons) vegetable oil
- (1 tablespoon) cornstarch
- (1 tablespoon) ginger, minced
- (2 cloves) garlic, minced
- (1/2 teaspoons) red pepper flakes
- (1/4 cups) green onions, chopped
- Salt and pepper to taste

In a bowl, toss 1 lb shrimp with 1 tablespoon cornstarch, salt, and pepper. Set aside. Add 2/4 teaspoon red pepper flakes and Salt and pepper to taste.

Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat.

Add 2 cloves minced garlic and 1 tablespoon minced ginger to the skillet, sauté for 30 seconds until fragrant.

Add 4 cups broccoli florets to the skillet and stir-fry for 3-4 minutes until bright green and tender-crisp.

Push the broccoli to one side of the skillet and add the shrimp. Cook for 2-3 minutes until shrimp are pink and opaque.

Pour in 1/4 cup soy sauce and 1/2 teaspoon red pepper flakes, stirring to combine all ingredients. Cook for an additional minute.

Serve the stir-fry over 2 cups cooked white rice and garnish with 1/4 cup chopped green onions.
