- (8 slices) whole grain bread
- (4 cups) mixed greens (lettuce, spinach, arugula)
Instructions
- 1
In a large bowl, combine 2 cups shredded cooked chicken, 1/2 cup mayonnaise, 1/4 cup plain Greek yogurt, and 1 tablespoon Dijon mustard. Mix well until combined. Add 2/4 teaspoon garlic powder and 2/4 teaspoon onion powder.
- 2
Add 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to the mixture. Stir to incorporate the seasonings evenly.
- 3
Fold in 1/2 cup diced celery, 1/2 cup halved red grapes, and 1/4 cup chopped walnuts until all ingredients are well mixed.
- 4
Cover the bowl with plastic wrap and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld.
- 5
To assemble the sandwiches, lay out 4 slices of whole grain bread and evenly distribute the chicken salad mixture over them.
- 6
Top each sandwich with a generous handful of mixed greens (about 1 cup per sandwich).
- 7
Place the remaining 4 slices of bread on top to complete the sandwiches. Cut in half if desired, and serve immediately.
