Classic Chicken Salad Sandwiches

Ingredients
Yields 4 servings
- (2 cups) cooked chicken, shredded
- (1/2 cups) mayonnaise
- (1/4 cups) plain Greek yogurt
- (1/2 cups) celery, diced
- (1/4 cups) red onion, finely chopped
- (1/4 cups) sweet pickle relish
- (1 tablespoon) Dijon mustard
- (1 tablespoon) lemon juice
- Salt and pepper to taste
- (8 slices) whole grain bread
- Lettuce leaves for serving
Instructions

In a large bowl, combine 2 cups cooked chicken, shredded.

Add 1/2 cup mayonnaise and 1/4 cup plain Greek yogurt to the bowl.

Mix in 1/2 cup diced celery, 1/4 cup finely chopped red onion, and 1/4 cup sweet pickle relish.

Stir in 1 tablespoon Dijon mustard and 1 tablespoon lemon juice.

Season with salt and pepper to taste, and mix until well combined.

Lay out 8 slices of whole grain bread on a clean surface.

Spread a generous amount of the chicken salad mixture onto 4 slices of bread.
