Classic Chicken Quesadilla with Fresh Salsa

Ingredients
Yields 4 servings
- (2 cups) cooked chicken, shredded
- (1 cup) shredded cheese (cheddar or Monterey Jack)
- (4) large flour tortillas
- (1 tablespoon) olive oil
- (1/2 teaspoons) ground cumin
- (1/2 teaspoons) chili powder
- (1/4 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1) medium tomato, diced
- (1/4 cups) red onion, finely chopped
- (1/4 cups) fresh cilantro, chopped
- (1) lime, juiced
- (1/2) jalapeño, seeded and minced (optional)

In a bowl, combine 2 cups cooked chicken, 1 tablespoon olive oil, 1/2 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix well to coat the chicken evenly.

Heat a large skillet over medium heat. Place one tortilla in the skillet and sprinkle 1/4 cup shredded cheese over half of the tortilla.

Add 1/2 of the chicken mixture on top of the cheese. Fold the tortilla in half to cover the filling and cook for about 3-4 minutes until the bottom is golden brown.

Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is melted. Remove from the skillet and keep warm. Repeat with the remaining tortillas and filling.

For the fresh salsa, combine 1 medium diced tomato, 1/4 cup finely chopped red onion, 1/4 cup chopped fresh cilantro, juice of 1 lime, and 1/2 minced jalapeño (if using) in a bowl. Mix well and season with salt to taste.

Cut the quesadillas into wedges and serve with the fresh salsa on the side.
