- (1) red bell pepper, sliced
- (1) green bell pepper, sliced
- (1) medium onion, sliced
- (2 tablespoons) olive oil
- (2 teaspoons) chili powder
- (1 teaspoon) cumin
- (1 teaspoon) garlic powder
- (1 teaspoon) paprika
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (2 cups) cooked rice
- (1/4 cups) fresh cilantro, chopped
- (1) avocado, sliced
- (1) lime, cut into wedges

In a large bowl, combine 1 lb sliced chicken breast, 2 tablespoons olive oil, 2 teaspoons chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well to coat the chicken evenly. Add 2/4 teaspoon salt.

Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center.

Remove the chicken from the skillet and set aside. In the same skillet, add 1 sliced red bell pepper, 1 sliced green bell pepper, and 1 medium sliced onion. Sauté for 5-7 minutes until the vegetables are tender and slightly charred.

Return the cooked chicken to the skillet with the vegetables and stir to combine. Cook for an additional 2 minutes to heat through.

To serve, divide 2 cups cooked rice among 4 bowls. Top each bowl with the chicken and vegetable mixture.
