Classic Chicken and Avocado Salad Sandwiches

Ingredients

- (2 cups) cooked chicken, shredded
- (1) ripe avocado, mashed
- (1/4 cups) plain Greek yogurt
- (1 tablespoon) Dijon mustard
- (1 tablespoon) lemon juice
- (1/2 teaspoons) garlic powder
- Salt to taste
- Pepper to taste
- (1/4 cups) celery, finely chopped
- (1/4 cups) red onion, finely chopped
- (4 slices) whole grain bread
- Lettuce leaves for serving
- Tomato slices for serving

In a large mixing bowl, combine 2 cups of shredded cooked chicken and 1 ripe mashed avocado. Add 2/4 teaspoon garlic powder and Salt to taste.

Add 1/4 cup of plain Greek yogurt, 1 tablespoon of Dijon mustard, 1 tablespoon of lemon juice, and 1/2 teaspoon of garlic powder to the bowl.

Season with salt and pepper to taste, then mix until well combined.

Fold in 1/4 cup of finely chopped celery and 1/4 cup of finely chopped red onion to the chicken and avocado mixture.

Lay out 4 slices of whole grain bread on a clean surface.

Spread a generous amount of the chicken and avocado salad onto 2 slices of bread.

Top with lettuce leaves and tomato slices, then place the remaining slices of bread on top to create sandwiches.
