  • (4) large eggs
  • (4 slices) cheddar cheese
  • (4) sandwich rolls (e.g. brioche or English muffins)
  • (4 tbsp) butter
  • (1/4 tsp) black pepper
  • (1/4 tsp) salt
  • (1 tbsp) olive oil

Instructions

    Crack the (4) large eggs into a bowl and season with (1/4 tsp) salt and (1/4 tsp) black pepper. Whisk together until well combined.

    Heat (1 tbsp) olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook, gently stirring, until the eggs are softly scrambled (about 3-4 minutes). Remove from heat.

    In the same skillet, melt (4 tbsp) butter over medium heat. Split the (4) sandwich rolls and place them cut-side down in the skillet. Toast until golden brown (about 2-3 minutes).

    Once the rolls are toasted, place the scrambled eggs evenly on the bottom halves of the rolls. Top each portion of eggs with (1 slice) cheddar cheese per sandwich.
