Classic Beef Chili

Ingredients
Yields 4 servings
- (1 lb) ground beef
- (1) onion, diced
- (2) garlic cloves, minced
- (1) green bell pepper, diced
- (1) red bell pepper, diced
- (2 cans) (15 oz each) kidney beans, drained and rinsed
- (1 can) (28 oz) crushed tomatoes
- (2 tbsp) tomato paste
- (1 tbsp) chili powder
- (1 tsp) cumin
- (1 tsp) smoked paprika
- (1/2 tsp) salt
- (1/2 tsp) black pepper
- (2 cups) beef broth
- (1 tbsp) olive oil

In a large pot, heat (1 tbsp) olive oil over medium heat.

Add (1) diced onion and sauté for about 3 minutes until translucent.

Add (2) minced garlic cloves and cook for another minute until fragrant.

Stir in (1) diced green bell pepper and (1) diced red bell pepper, cooking for about 5 minutes until softened.

Add (1 lb) ground beef to the pot. Cook until browned and no longer pink, breaking it apart as it cooks, about 5-7 minutes.

Once the beef is browned, drain any excess fat if necessary.

Add (2) cans of kidney beans, (1 can) crushed tomatoes, and (2 tbsp) tomato paste to the pot. Stir well to combine.

Season with (1 tbsp) chili powder, (1 tsp) cumin, (1 tsp) smoked paprika, (1/2 tsp) salt, and (1/2 tsp) black pepper.

Pour in (2 cups) beef broth and stir everything together.

Bring the chili to a boil, then reduce heat to low and let it simmer uncovered for about 30 minutes, stirring occasionally.
