  • (1 can) chickpeas, drained and rinsed
  • (1) ripe avocado, diced
  • (1 cup) cherry tomatoes, halved
  • (1/2) red onion, finely chopped
  • (1/4 cups) fresh cilantro, chopped
  • (2 tbsp) olive oil
  • (1 tbsp) lime juice
  • (1/2 tsp) cumin
  • (1/4 tsp) salt
  • (1/4 tsp) black pepper

Instructions

    In a large mixing bowl, combine the (1 can) chickpeas, (1) diced avocado, (1 cup) halved cherry tomatoes, and (1 /2) finely chopped red onion.

    Add (1/4 cup) chopped fresh cilantro to the bowl.

    In a small bowl, whisk together (2 tbsp) olive oil, (1 tbsp) lime juice, (1/2 tsp) cumin, (1/4 tsp) salt, and (1/4 tsp) black pepper.

    Pour the dressing over the salad ingredients and gently toss to combine, being careful not to mash the avocado.
